The BEST EVER cookies!



Do you ever get cravings for the fine combination of crunchy biscuit and the chewy centre of freshly bake cookies? 
I know i most definitely do!

This recipe came about after a sudden craving for cookies at 2am, and in my desperate blurry eyed cookie wanting state, i trawled the internet for the perfect recipe... 
I found many, but none of them had that 'wow' factor that i was so desperately after, so i made one up using my previous cookie making memories and safe to say, they turned out AMAZING!!

I didn't bake these at 2am, I waited until early the next morning so me and my boyfriend could bake them together so they were fresh for a maths revision session we were going to later that day. We made around 20 and they all were gobbled up so quickly, I wish we had made a couple more!

These cookies are a perfect quick snack to bake with family, friends, or on your own (i prefer baking on my own as demonstrated in one of my earlier blog posts here...).
The dough will keep frozen in preprepared balls for up to a year, meaning there's no excuse not to have something quick and delicious to serve up to unexpected guests or take to last minute family events.

Ingredients:

  • 1 and a ½ cups of plain flour
  • ½ teaspoon of baking powder
  • ½ teaspoon of salt
  • ½ cup of white sugar (granulated or caster)
  • ½ cup of brown sugar
  • ½ cup of butter 
  • 1 egg 
  • Chocolate chips
  • Smarties or m&m's (or anything else you could ever possibly want to add)

Method:



  • Preheat your oven to 190ºc

  • In a bowl, cream together the butter and sugar and add the egg and continue to mix until light and fluffy

  • Sift together the flour, salt and baking powder
  • Add the flour to the butter, sugar and egg mixture and mix until a dough tarts to form.
  • Now it's time to add the fun stuff!!! Make a well in the centre and put whatever yummy treat you like in there. We chose to use M&m's and chocolate.

TIP: 
Keep some of the extra treats to use later. the cookies look really good with a few treats stuck on the top just before baking!



  • Bring the dough together with your hands

  • Using an iceream scoop or spoon (size is up to you) make balls with the mixture and place onto a greased or lined baking tray evenly spaced apart (around 2 inches). 

This step is where you'd put the balls into freezer bags or an airtight container ready for freezing and baking at a later date.


  • Place some of the reserved treats on top at this point, the messier the better if you want a rustic homemade look.

  • Place into the centre of the oven and bake for 10 minutes or until they start to brown. 


  • Leave to cool for 5 minutes on the tray and then carefully transfer to a cooling rack... if you haven't eaten them all by then! They are soooooo perfect freshly baked with icecream!
And there you have it!
