
This recipe makes around 30 small cookies or 16 larger ones. The large ones spread significantly in the oven, the small ones not so much, I prefer the smaller ones.
125g/4.5oz - Unsalted Butter (plus extra for greasing)
350g/12oz - Self Raising Flour (Sieved)
A pinch of salt
200g/7oz - Caster Sugar (granulated works fine too)
1 table spoon - Ground Ginger
1 tea spoon - Bicarbonate of Soda
75g/2.5 oz - Golden Syrup
1 Beaten Egg
1 tea spoon - Orange rind
Method:
Preheat the oven to 160°c/325°f /gas mark 3.
Prepare your ingredients.
Place the sugar, flour, salt, ginger, and bicarbonate of soda into a bowl.
In a pan place the butter and golden syrup and melt over a low heat then leave to cool, the butter and syrup should combine after cooling. Don't worry if they don't, it all gets mixed together anyway.
Add the egg and the contents of the pan into the dry ingredients and mix until a soft dough forms.
Form small balls and place on a greased baking tray. I'm not sure how to describe the perfect sized ball... around about the size of an eyeball should be okay. Maybe a tiny bit bigger?
Press each ball down slightly to spread each ball a little bit. Be warned they do spread quite a bit in the oven !
