Pumpkin Spice Mayonnaise Muffins


The festive season is fast approaching and the air is getting that winter chill, which means there's no possible better time to make some spicy festive muffins!

I made these muffins just before Halloween and they went down so well, I thought I'd share the recipe with you. Ideally i would have had this blog post up before Halloween, but with university work and other commitments, it's a bit later than planned! However these muffins aren't just for Halloween so there's still plenty of time to enjoy them throughout the festive season.

I first came across using mayonnaise in a muffin recipe whilst searching how to get that moist texture that all shop bought muffins have, which is something i'd never been able to achieve until now. The mayonnaise is a normally substitute for eggs and fat (sometimes additional eggs may need to be used). If you use a low fat mayonnaise, it significantly reduces the fat content of the muffins which can only be a good thing because now you can eat 7 and not feel quite as bad!

The spices used in the muffins can be completely tailored to your preferences, so they're really really adaptable. The pumpkin purée can be made at home using cooking pumpkin and a bender, or bought in a can from most supermarkets.

These muffins are lovely served with either a hot chocolate or vanilla ice cream or both!

Ingredients:
1½ cups of all purpose/plain flour 
½ a cup of granulated sugar 
½ a cup of light brown sugar
½ tsp of salt¼ tsp of ground cloves¼ tsp nutmeg¾ tsp of cinnamon
1 tsp of baking soda
½ tsp of baking powder
1 cup of pumpkin puree (make sure this is NOT pumpkin pie filling)
½ a cup of mayonnaise


Method:

Preheat oven to 180 degrees celsius. 


Into a large mixing bowl, sift in the flour.


Add both of the sugars



Add the salt, spices, baking powder, and baking soda. Stir all dry ingredients together.


Add the pumpkin purée.



Finally, add the mayonnaise and the egg.


Stir gently until all ingredients are incorporated.



Spoon into muffin cases so they're just under ¾ full.



Place into the preheated oven for 25-30 minutes and remove when golden.
